The Champagne house of Ayala was founded by Edmond de Ayala in 1860. Champagne Ayala is one of the oldest houses in Champagne and has been part of the Champagne Bollinger portfolio since 2005. There are 35 acres of grand cru vineyards within the Ay region of Champagne. Cellar master Julian Gout, blended six sites, premier and grand cru, from Chouilly, Cramant, Le Mesnil-sur-Oger, Oger, Bisseuil and Cuis in crafting this Champagne from the 2018 vintage. This 100% Chardonnay cuvée has a low dosage and is aged for six years in Ayala’s cellars before release.

This golden chromatic Champagne is built on a platform of purity, elegance and tension. Sleek and racy in design this wine has a glamorous bouquet of fresh brioche and crushed slate. Spiced pears, green apple and star fruits greet you on the entry as it transitions quickly to elements of
wet stone and lightly roasted roasted nuts. The broad and fleshly palate is integrated with fresh citron acidity making it strikingly clean and graceful at the end.
